4 ripe Apricot
1 Tbsp chopped almonds
30 grams ground almonds
250 grams Pastry flour
1 tsp Baking powder
1 tsp baking soda
1 egg
80 grams sugar
8 vegetable oil
200 Buttermilk
softened butter (for greasing the muffin tin)
Pastry flour (for the muffin tin)
slivered almonds (for sprinkling)

Preparation steps

The oven to 180°C (approximately 350°F).

Rinse the apricots, cut in half, remove the pits and cut each one into 3 pieces. Combine the ground almonds, pastry flour, baking powder and baking soda in a large bowl. Whisk the egg, sugar, oil and buttermilk together in a separate bowl until smooth. Stir the wet ingredients into the dry ingredients and mix until smooth.

Grease a muffin tin with butter and lightly dust with flour. Fill the cavities of the muffin tin about 1/3 of the way with the muffin batter, place an apricot piece in the center, sprinkle with chopped almonds and top with the remaining batter. Sprinkle the sliced almonds on top and bake for 25 minutes, until a toothpick inserted comes out clean. Remove from the oven and cool on a wire rack.
