- For the pastry
- ½ cup Almond flour
- 2 cups all-purpose flour (plus extra for dusting)
- 1 pinch salt
- 1 egg (separated)
- 2 Tbsps sugar
- ¼ cup cold unsalted butter (chopped)
- For the filling
- 12 ozs crisp Apple (peeled, cored, thinly sliced)
- 4 Tbsps Apricot Jam
- 1 tsp vanilla extract
- To decorate
- 4 Vanilla bean (split)
- powdered sugar
- 1 tsp ground cinnamon
Preparation steps

For the pastry: combine the ground almonds, flour, egg white, sugar and chopped butter in a mixing bowl. Mix well until a smooth dough forms. Wrap the dough in cling film and chill for 30 minutes.

Heat the oven to 180°C (160° fan) 350°F gas 4. Grease 4-6 individual tart or flan tins

Separate the dough into 4-6 portions.

Roll out the pastry on a floured surface and line the tins. Prick the pastry all over with a fork, line the pastry cases with non-stick baking paper and fill with rice or dried beans. Bake for 10 minutes.

Increase the oven temperature to 200°C (180° fan) 400°F gas 6.

Arrange the apple slices in the pastry cases, overlapping as in the photo.

Warm the apricot jam and vanilla in a small pan and spoon over the filling.
8.
Bake for about 10 minutes until the apples are tender and the pastry is golden. Cool in the tins for a few minutes, then place on a wire rack to cool completely.
9.
Place a split vanilla pod on each tart, then sift over the icing sugar and cinnamon.
