280 grams Pastry flour
2 large Apple
1 tsp cinnamon
2 tsps Baking powder
½ tsp baking soda
1 egg
80 grams sugar
80 milliliters vegetable oil
Buttermilk
125 milliliters Apple juice
For baking and icing
12 Muffin tin
butter (for the muffin tin)
150 grams powdered sugar
3 tsps lemon juice

Preparation steps

1.

For baking, butter the muffin tins and place the sheet in the freezer. 

2.

Peel the apples and cut into small pieces. Toss together the apples with the flour, cinnamon, baking powder and baking soda.

In a large bowl, whisk the egg slightly then add the sugar, vegetable oil, buttermilk and apple juice. Mix well.

Stir together  the flour mixture and the egg mixture until just combined. Stir together the sugar and cinnamon.

Fill the muffin tin with the batter. Sprinkle with the sugar and cinnamon mixture. Bake in and oven preheated to 180°C (approximately 350°F) for about 25 minutes.

Let the muffins cool for 5 minutes in the tin. Then remove and let cool completely on a wire rack. .

For the icing, mix the apple with 1 teaspoon lemon juice. Stir the remaining lemon juice with powdered sugar into a thick icing. Drizzle the icing over the muffins and top with the apple pieces. Serve with coffee as desired.
