90 grams honey

½ tsp ground cloves
¼ tsp ground Cardamom
1 tsp ground cinnamon
1 tsp untreated grated Orange peel
6 Tbsps fresh pressed Orange juice
5 Tbsps liquid honey
800 grams sour Organic apple
2 Tbsps lemon juice
1 egg yolk
powdered sugar (for dusting)

Preparation steps

For the dough, mix the flour with the baking powder and a pinch of salt, piling on a work surface. Make a well and pour in the honey and the egg yolks. Cut the cold butter into the dough ingredients with a large knife until crumbs are formed. Then quickly with both hands knead into a smooth dough. Shape into a ball and put in the refrigerator to cool for about 30 minutes.

Meanwhile, chop the nuts and the apricots finely and mix with the spices, grated orange peel, orange juice and honey.

After the cooling time, grease a springform pan and dust with flour. Place 2/3 of the dough on a lightly floured surface to roll out into circle of 26 cm (approximately 10 inches) diameter and place on the bottom of the springform pan. Form the other third into a bead shape, roll out flat and place on the edge of the springform pan (cut out some of the dough to stars and also refrigerate). Press the edge down well and combine with the dough base. Form a piece of aluminum foil into a bead shape and insert it into the edge of the springform pan so that it is stabilized. Cool again for 30 minutes.

Preheat the oven to 180°C (approximately 350°F).

For the fillin, rinse the apples and cut into quarters, remove the core and cut into slices. Immediately sprinkle with the lemon juice.

Prick the cooled pastry base several times with a fork, remove the aluminum foil.

Spread half the nut mixture on the pastry base, cover with the apple slices, crumble the rest of the nut mixture over it and finally put the stars on it. Brush all with egg yolk and bake 35-45 minutes in the preheated oven, until the edge is crisp and the apples are soft.

Allow 10 minutes in the form. Loosen the edge of the springform pan and let cool on wire rack. When cooled remove from the springform pan, decorate with a red ribbon and serve dusted with powdered sugar.
