For the salad
500 grams turkey breasts
1 garlic clove
lemons
250 grams Arugula
200 grams Cherry tomatoes
80 grams Parmesan
4 slices Toast
2 Tbsps butter

For the dressing
4 Tbsps White vinegar
5 Tbsps Chicken broth (Instant)
1 tsp Mustard
5 Tbsps vegetable oil

Preparation steps

For the salad, rinse turkey, pat dry and cut into small 1.5 cm (approximately 1/2 inch) thick slices and season with salt and pepper. Peel garlic, squeeze through a garlic press, mix in a bowl with lemon juice, add chicken to the bowl, mix, cover and marinate for 30 minutes.

Rinse lettuce and pat dry. Rinse tomatoes, cut in half. Thinly slice Parmesan.

Dice bread. Melt butter in a pan and fry bread cubes until crispy. Remove bread from the pan. Add oil and fry turkey on all sides until cooked. For the dressing, mix vinegar, broth, mustard and oil in a bowl and season with salt and pepper. Arrange arugula and tomatoes on plates, cover with turkey and drizzle with the dressing. Sprinkle with croutons and Parmesan and serve.
