Arugula Salad with Meatballs

- 1 garlic clove
- 2 tsps freshly grated ginger
- 600 grams ground pork
- 1 egg
- ½ untreated Lime (zest and juice)
- Sambal oelek

- freshly ground peppers
- 2 bunches Arugula
- 100 grams Snow peas
- 1 red Bell pepper
- 6 Tbsps vegetable oil
- 1 green chili pepper
Preparation steps
Peel garlic and press in a garlic press. In a bowl, combine garlic, ginger, ground pork, egg, lime zest and 1/4 teaspoon sambal oelek. Season with salt and pepper and mix well. Form mixture into tennis ball-sized shapes. Fry meatballs in 2 tablespoons hot oil until brown on all sides.
Rinse, trim and spin arugula dry. Rinse, trim and blanch snow peas about 2 minutes in salted boiling water. Drain snow peas, rinse with cold water, and let drain again. In a bowl, combine arugula and snow peas. Rinse and halve peppers. Remove seeds and ribs and dice.
Add peppers to salad. To make dressing: Rinse and halve chile lengthwise. Remove seeds and ribs and cut into thin strips. In a bowl, whisk together chiles with lime juice and remaining oil. Season with salt. Toss salad with dressing and divide among plates. Serve topped with meatballs.
