Asian Chicken with Vegetables

- 1 chicken (600g)
- 3 tsps cornstarch
- ½ Tbsp soy sauce
- 1 green paprika
- 1 Zucchini
- 1 tsp chopped ginger
- 1 tsp chopped garlic cloves
- 3 cups vegetable oil
- 3 Tbsps Peanuts
- For the sauce
- 1 ½ Tbsps sweet Bean sauce (Tianmian Jiang)
- ½ Tbsp sugar
- 2 Tbsps water
- ½ Tbsp Rice wine
Preparation steps
Debone chicken, but do not remove skin. Cut chicken into 2.5-cm (approximately 1-inch) cubes and transfer to a bowl. Mix cornstarch with 3 tsp water and pour over chicken. Add soy sauce and toss to coat chicken. Remove seeds and ribs from pepper and cut into cubes. Rinse zucchini, cut lengthwise into quarters and crosswise into bite-sized pieces. Mix all ingredients for the sauce together. Heat oil in a wok to about 120° C (approximately 250°F). Add chicken and cook 15 seconds. Remove from wok.
In a second pan, heat 3 tablespoons oil. Sauté chopped ginger and garlic. Add zucchini and pepper and sauté briefly, then add peanuts.
Pour sauce into pan with ginger and garlic. When sauce becomes fragrant, add chicken. Stir until warmed through and serve immediately.
