- 2 Tbsps sesame oil
- 1 clove garlic cloves (minced)
- 1 fresh ginger (peeled and grated)
- 2 medium Zucchini (seeded and cut into long strips)
- 2 medium carrots (peeled and julienned)
- 14 ozs cooked vegan noodle
- 3 Tbsps dark soy sauce
- 2 Tbsps Rice wine vinegar
- 1 Tbsp Sesame seeds
- Thai Basil
- freshly ground Black pepper
Preparation steps
1.
Heat the oil in a wok or large saute pan set over a moderate heat until hot.

Add the garlic, ginger, courgette, and carrot, sautéing for 3 - 4 minutes.

Add the noodles, soy sauce, vinegar, sesame seeds, and a few basil leaves. Toss well and cook for a further 2 - 3 minutes until the noodles are warmed through. Season with black pepper.
4.
Lift into bowls and serve with a garnish of basil leaves on top.
