1 ½ cups Basmati rice
salt
1 Star anise
5 fresh bay leaves
1 Cinnamon stick
1 onion
2 cloves garlic cloves
1 red chili pepper (deseeded and chopped)
5 ¼ cups Tomatoes
2 Tbsps Coconut oil
1 Tbsp red Curry paste
cup fish stock
2 cups giant Prawn
1 Tbsp Lime juice
1 pinch brown sugar
1 Tbsp Fish sauce

Preparation steps

1.
Wash the rice in a sieve and cook in twice the amount of salted water, together with the star anise, a bay leaf and the cinnamon stick.

Peel and finely chop the onion and garlic. Wash the chilli peppers, cut in half, remove the seeds and finely chop. Place the tomatoes in boiling water, then immediately into cold water and skin. Cut into quarters, remove the seeds and finely chop.

Gently fry the onion, garlic and chilli in a hot frying pan in a little oil. Mix in the curry paste and deglaze with the stock. Add the tomatoes and the remaining bay leaves and simmer for approx. 15 minutes until thickened. Clean the prawns then place into the tomato sauce and simmer for approx. 5 minutes. Do not boil.

Season to taste with lime juice, sugar and fish sauce. Serve with the spicy rice.
