- 150 grams Rice noodles
- 1 stalk Leeks
- 2 carrots
- 1 sprig Lemongrass
- 2 garlic cloves
- 2 centimeters ginger
- 150 grams fresh shiitake mushrooms
- 150 grams fresh button Mushroom
- 2 Tbsps soybean oil
- 1 l Chicken broth
- 2 Tbsps Oyster sauce
- salt
- peppers (freshly ground)
Preparation steps

Soak rice noodles in plenty of cold water. Rinse leek thoroughly under running water, shake dry and cut into 5 cm (approximately 2 inches) long strips. Peel carrot peel and cut into 5 cm (approximately 2 inches) long strips. Grate lemongrass. Peel and finely chop garlic and ginger. Clean mushrooms with a kitchen towel.

Heat oil in a large saucepan and sauté garlic and ginger for about 1-2 minutes. Add broth, oyster sauce, vegetable strips, mushrooms and lemongrass and simmer for 5-10 minutes on medium heat. Add drained rice noodles and briefly heat. Season with salt and pepper. Serve.
