- 7 ozs Rice vermicelli
- boiling water
- 3 eggs (beaten)
- 1 coarsley grated carrot
- 4 scallions (chopped)
- 2 Tbsps coarsely chopped cilantro
- 2 red chili peppers (cut into rings)
- 2 Tbsps sweet gluten-free chili sauce
- 2 Tbsps vegetable oil
- To garnish
- Lime wedge
Preparation steps
1.
Place the noodles in a large heatproof bowl and cover with boiling water. Leave to stand for 5 minutes until tender; drain. Cut the noodles coarsely with scissors.

Combine the noodles, eggs, carrots, spring onions, coriander, chillies and sauce.
3.
Heat a little of the oil in a large frying pan. Cook 3-4 spoonfuls of the mixture, flattening slightly with spatula, until browned on both sides.
4.
Repeat with the remaining oil and noodle mixture.
5.
Serve hot garnished with lime wedges
