- 4 boneless, skinless Chicken breasts (halves)
- 4 Tbsps sesame oil
- 2 Tbsps honey
- 2 Tbsps soy sauce
- 3 Tbsps olive oil
- 1 head Romaine lettuce (washed and torn into large pieces)
- 1 cup cherry Tomatoes (rinsed and halved)
- 1 small Red onion (peeled and thinly sliced)
- ¼ cup raisins
- 2 sprigs fresh mint (leaves only)
- 2 ripe Avocados (peeled; stone removed and sliced)
- 2 Tbsps Sesame seeds
Preparation steps

Rinse the chicken under cold running water and pat completely dry with paper towels. Place chicken in a single layer in a shallow dish or pan.

In a small bowl, whisk together sesame oil, honey and soy sauce and brush over both sides of the chicken. Set aside for 20 minutes.

Heat the oil in a large heavy bottomed skillet and gently cook the chicken breasts for 3 to 4 minutes on each side or until cooked through. Transfer the chicken breasts to a chopping board and cut into thick slices.

Place the lettuce, tomatoes, and onions into a large bowl and sprinkle with raisins and mint leaves. Add the sliced avocado and chicken to the salad and sprinkle sesame seeds. Divide among plates and serve.
