Avocado Stuffed with Chicken and Leeks

The avocado offers not only cell-protecting vitamin E, but also plenty of mono- and polyunsaturated fatty acids. These have a positive influence on the cholesterol level. Filled with chicken breast, parmesan, yoghurt and sour cream, iron and calcium as well as plenty of protein come into play.
You want to do something else for your eyes? Instead of fine carrot strips you can also add fruity mango cubes to the filling. The tropical fruit is one of the top suppliers of vitamin A and beta-carotene among the fruits.

- 1 stalk Leeks
- 4 Chicken breasts (each around 120 grams) (approximately 4 ounces)
- 1 garlic clove
- ½ tsp Curry powder
- salt
- cayenne pepper
- 2 Tbsps olive oil
- lemon juice
- 2 Tbsps Mayonnaise
- 2 Tbsps Crème fraiche
- 4 Avocados
- 50 grams shaved Parmesan
- 1 Tbsp Red cabbage sprout
- 1 Tbsp scallions
Preparation steps
Rinse the leek, trim and cut into rings. Rinse the chicken, pat dry and cut into small pieces. Peel the garlic, chop finely and mix with the chicken and curry powder and season with salt and cayenne pepper. Heat the oil and sauté the leek for 2-3 minutes. Remove from the heat and let cool. Season with lemon juice.
Combine the mayonnaise and crème fraîche. Cut the avocados in half and remove the pits. Fill each with a little mayonnaise mixture and Parmesan. Top with the chicken and leeks and garnish with sprouts and chives.
