- 4 fillet Steak (about 200 g each)
- 4 rashers Bacon
- salt
- freshly ground peppers
- 1 Tbsp clarified butter
- ⅔ cup dry white wine
- 1 Tbsp pickled green Peppercorns (or bunches of green peppercorns)
- 4 ½ cups Green beans (trimmed)
- 6 ½ cups floury potatoes (peeled and quartered)
- ½ cup milk
- 0.333 cup double cream
- 3 Tbsps butter
- Nutmeg
- 2 Tbsps chopped parsley
Preparation steps

Trim the bacon and wrap a rasher around the edge of each steak, tying with kitchen string.

Cook the potatoes in boiling salted water for about 25 minutes. Drain and mash or pass through a potato ricer and then mix with milk, cream and butter. Season with salt, pepper and nutmeg and finally mix in the parsley.

Cook the green beans in boiling salted water for about 4-5 minutes until tender.

Heat the clarified butter in a frying pan and fry the steaks for 1 minute each side over a high heat. Reduce the heat and fry for a further 3-5 minutes each side (depending how well done you like them).

Season with salt and pepper, remove from the pan, wrap in aluminium foil and keep warm. Pour off the frying fat, raise the temperature and deglaze with wine. Add the green peppercorns, boil to reduce slightly and season to taste with salt.
6.
Serve the steaks with the sauce, mashed potato and beans.
