½ Red cabbage
200 milliliters Red wine
50 milliliters Red wine vinegar
1 Apple
1 onion
1 bay leaf
2 cloves
1 pinch cinnamon
lingonberry (or cranberries)
salt
freshly ground peppers
cornstarch (to thicken if necessary)
4 Partridge breasts (skinless)
8 slices air-dried Bacon
3 Tbsps vegetable oil

Preparation steps

For the red cabbage: Rinse the red cabbage and thinly slice. Place in a bowl and toss with the wine, vinegar and grated apple. Allow to sit overnight in the refrigerator to marinate.

Peel the onion and insert the bay leaf and cloves into it. Place the cabbage and onion in a large saucepan and cover halfway with a lid. Simmer for 1 hour. Remove the onion from the cabbage. If necessary, thicken with cornstarch. Season with the cinnamon and lingonberries, as well as the salt to taste.

For the partridge: Cut the partidge breasts in half. Season with salt and pepper to taste and wrap each in a slice of bacon. Heat some oil in a skillet. Add the partridge and sear until golden on all sides, about 8-10 minutes. Remove from heat and let rest until done. Serve with the cabbage.
