Baguette with Peppers and Beef Strips
Ingredients
- For the meat
- 4 Baguette
- 500 grams Beef (such as, loin, hip, fillet)
- 2 red Bell pepper
- 1 garlic clove
- 3 Tbsps olive oil
- Sea salt
- freshly ground peppers
- For the sauce
- 1 egg
- 1 egg yolk
- 1 tsp hot Mustard
- 125 milliliters vegetable oil
- salt
- freshly ground peppers
- 2 Tbsps White vinegar
- 2 Tbsps Crème fraiche
- ½ bunch mixed Fresh herbs (chervil, dill, chives, cress, parsley)
- 1 tsp Caper
- 1 Tbsp chopped onions
- 1 Pickled cucumber
- 1 Anchovy fillet
Preparation steps
For the sauce, hard boil the egg and allow to cool. Peel, halve and place the egg yolk in a bowl.
Add the raw egg yolk and mustard and mix with a fork. Add the oil, drop by drop, while whisking vigorously to create a creamy sauce.
Fold in the vinegar and créme fraiche. Rinse the herbs, pat dry and finely chop. Cut the capers, onion and cornichons into small cubes. Rinse the anchovy fillets under running water and chop.
Mix everything with the chopped egg and the sauce and season well with salt and pepper.
Slice the baguettes, but not all the way through.
For the meat, cut the beef into very thin slices and spread on a baking sheet lined with parchment paper.
Peel the garlic and cut into thin slices. Spread over the meat.
Rinse the bell peppers, cut in half and remove the seeds and ribs. Dice coarsely and add to the meat. Drizzle with olive oil and season with sea salt and pepper.
Place under a preheated grill for about 5-10 minutes, turning several times.
Distribute, along with the sauce, into the bread and serve warm.
