- 4 Chicken thigh
- 2 eggs
- 80 grams breadcrumbs
- 2 Tbsps chopped parsley
- 2 dried Tomatoes in oil
- 2 Tbsps Potato starch
- 2 Tbsps Mustard
- 2 Tbsps honey
- ½ tsp ground paprika
- salt
- peppers
Preparation steps

Rinse chicken and pat dry. Mix together mustard, honey and paprika. Season with salt and pepper. Rub mixture on chicken thighs. Whisk eggs with potato starch. Drain tomatoes, pat dry and chop very finely.

Mix together breadcrumbs, chopped tomatoes and parsley. Dip thighs first in egg mixture, and then coat with breadcrumb mixture. Place thighs in an ovenproof dish and bake at 200°C (approximately 400°F), about 40 minutes.
