The low-calorie vegetable rhubarb provides a lot of beta-carotene and vitamin C as well as potassium and calcium.
If you want to save some more fat, use chicken breast fillets without skin instead of the legs.

- 500 grams fresh, ripe Rhubarb
- 1 chicken (oven-ready, 1.4 kg)
- salt
- freshly ground peppers
- butter (for the pan)
- 50 milliliters dry white wine
- 100 milliliters Chicken broth
- 1 bunch curly parsley
Preparation steps

Preheat the oven to 200°C (approximately 400°F).

Rinse rhubarb, trim and cut diagonally into 1 cm (approximately 1/2 inch) wide strips.

Rinse chicken, divide into 8 parts and season with salt and pepper. Add rhubarb o a greased baking dish. Add chicken over rhubarb, pour wine and broth over top and bake in preheated oven for about 30 minutes. Stir occasionally during cooking time.
4.
Rinse parsley, shake dry and finely chop leaves. To serve, arrange cooked chicken with rhubarb on plates and serve immediately.
