- 2 ¾ cups gluten-free all purpose flour (plus extra for dusting)
- 1 tsp xanthan gum (if not included in flour)
- ⅔ cup sugar
- ¼ tsp salt
- 1 cup dairy-free margarine
- ½ cup light brown sugar
- 1 tsp ground cinnamon
- 16 ozs ripe Plum (sliced)
- 1 tsp Corn starch
- powdered sugar
Preparation steps
1.
Heat the oven to 170°C (150° fan) 325°F gas 3. Line a 23cm| 9" square baking tin with non-stick baking paper.

Mix together 280 g|2 1/2 cups of the flour, the xanthan gum, sugar and salt.
3.
Add the margarine and mix to a soft dough. Remove about 150g|2/3 cup of the dough and put into a bowl.
4.
Add the brown sugar, cinnamon and the remaining flour to the smaller amount of dough and mix to combine. Chill.
5.
Press the remaining dough into the tin in an even layer, with well-floured hands.
6.
Lay the plum slices on top of the dough in 4 rows, overlapping them slightly in each row. Sprinkle the plums evenly with the cornflour.
7.
Break up the chilled dough into irregular clumps with a fork and sprinkle an even layer on top of the fruit. Press in the topping gently but evenly.
8.
Bake for about 45 minutes, until the top is light brown. Cool completely in the tin before cutting into slices.
9.
Sift icing sugar over the top.
