- For the cupcakes
- 1 ¼ cups all-purpose flour
- ½ tsp baking soda
- ½ tsp Baking powder
- 1 pinch salt
- 2 ripe Banana (mashed)
- ¼ cup sugar
- 2 ½ Tbsps butter (melted)
- ½ egg (beaten)
- 2 Tbsps Chocolate chip
- For the chocolate topping
- ⅔ cup cream (48% fat)
- 2.333 cups plain Dark chocolate (60% cocoa solids, chopped)
- ¼ cup unsalted butter
- To decorate
- 1 Banana
- lemon juice
Preparation steps
1.
For the cupcakes: heat the oven to 180°C (160° fan) 350°F gas 4. Place paper cases in 2 x 12 mini muffin tins.

Sift together the dry ingredients and set aside.

Mix together the bananas, butter and egg until smooth.

Add the flour mixture and stir until combined. Stir in the chocolate chips.

Spoon into the paper cases and bake for 10-15 minutes, until golden brown. Place on a wire rack to cool completely.

For the chocolate topping: heat the cream in a pan to a boil. Remove from the heat and add the chocolate. Leave to stand for 5 minutes, then stir until the chocolate has melted.
7.
Add the butter and stir until the mixture is smooth and glossy. Cool, then chill until firm enough to pipe.
8.
Put the mixture into a piping bag and pipe swirls on top of the cakes.
9.
Slice the bananas and toss the slices in lemon juice. Place on top of the cakes.
