Ingredients

For the pastry
1 ¼ cups Gluten-free flour
½ cup grated Parmesan
½ tsp salt
1 egg
½ cup butter
Legume (for blind baking)

For the topping
7 ozs Goat cheese
1.333 cups Smoked ham (sliced)
2 Tbsps green Pesto
2 Tbsps cold-pressed olive oil

Preparation steps

1.
Mix together the flour, cheese, salt, egg and butter to form a shortcrust pastry. Wrap in cling film and chill for 30 min in the fridge.
2.
Heat the oven to 200°C (180°C in a fan oven), 400°F, gas 6 and grease 8 round tartlet dishes 10 cm in diameter.

Roll out the pastry on a floured work surface and cut out circles to fit the dishes. Fill with legumes and bake for 12-15 min.

Remove from the oven and increase the temperature to 220°C (200°C in a fan oven), 425°F, gas 7.
5.
Remove the legumes from the tartlets and top with 2 slices of ham and 2-3 slices of cheese. Bake for 10 min.
6.
Mix the pesto with the oil and drizzle over the warm tartlets. Serve immediately.
