4 cups vegetable oil (for deep-frying)
3 cups roasting potatoes (peeled and cut into chunks)
2 ¼ cups canned Sweet corn (drain)
¼ cup plain flour
0.333 cup Corn starch
salt

1.333 cups self-rising flour
water (enough to make batter)
0.333 cup Sesame seeds

Preparation steps

1.
Spread the sesame seeds out on a small plate.
2.
Heat the vegetable oil to 180°C | 350F in a large, heavy-based saucepan.
3.
Cook the potatoes in a large saucepan of boiling, salted water until tender; roughly 15 minutes.
4.
Drain and allow to steam for a minute then mash with the sweetcorn, plain flour and seasoning.
5.
Make the batter for deep-frying by adding water to the self-raising flour, whisking all the time until you have a batter that falls easily away from the whisk.
6.
Take large teaspoons of the sweetcorn mixture and shape into balls using the palms of your hand.
7.
Dust in the cornflour, then drop into the batter and deep-fry in batches in the hot oil for 2-3 minutes until golden brown.
8.
Remove with a slotted spoon and roll immediately in the sesame seeds so that they stick to balls. Arrange on serving plates and serve.
