- 71 ozs Pork ribs (separated into 4 pieces)
- For the marinade
- 2 cloves crushed garlic cloves
- ⅜ cup tomato puree
- ¼ cup tomato Ketchup
- ⅜ cup honey
- ¼ cup Orange juice
- ¼ cup Cider vinegar
- ¼ cup soy sauce
- 2 Tbsps Worcestershire sauce
- 1 tsp freshly grated ginger
- White pepper
- To serve
- Potato wedge
- To garnish
- thyme
Preparation steps
1.
heat the oven to 160°C (140° fan) 325°F gas 3.

Put the ribs into a roasting tin.
3.
For the marinade: mix together all the ingredients and pour over the ribs.

Cover and cook for 2-3 hours, turning several times until the ribs are very tender.
5.
Heat the grill.

Remove the ribs from the marinade, drain and put flesh side down on the hot grill. Grill for 10 minutes, brushing with a little marinade. Turn the ribs over and cook for a further 10 minutes, brushing with the marinade.
7.
Place the ribs on warm plates, cut into pieces and serve with potato wedges. Garnish with thyme.
