1 Eggplant (sliced into 1cm thick discs)
4 cups lean Ground beef
1 tsp dried oregano
1 tsp dried thyme
salt
peppers
2 Vine Tomatoes (sliced)
2 Red onions (sliced into 1cm thick discs)
1 small round lettuce (leaves separated)
4 seeded Burger buns (halved)

Preparation steps

1.
Heat the grill to hot. Salt the aubergine discs to draw out excess water.
2.
In a large mixing bowl, break down the mince using your hands. Add the dried oregano and dried thyme and mix well. Season and form 4 equal sized balls. Flatten with your palm to make patties.
3.
Dry the aubergine discs and brush with the olive oil.
4.
Grill the patties and aubergine for 12-14 minutes, turning occasionally, until the patties are dark brown and cooked and until the aubergine discs are golden brown.
5.
Arrange the burgers by placing some lettuce leaves on the bottom half of the burger bun.
6.
Then top with tomato, red onion slices and slices of grilled aubergine. Top this with the beef patties.
7.
Top with more tomato, red onion slices, aubergine slices and some lettuce leaves. Serve immediately.
