- 2 Tbsps vegetable oil
- 2 ½ cups lean Beef (leg meat, ready to cook, cut into thin strips)
- 1 shallot (finely chopped)
- 1 clove garlic cloves (finely chopped)
- 3 ⅓ cups Sweet potato (peeled and diced)
- 2 cups chopped Tomatoes (tinned)
- ⅜ cup vegetable stock
- ground Cumin
- Chili powder
- ground cinnamon
- 2 sprigs parsley (chopped)
- 2 sprigs cilantro (chopped)
- 9 ozs frozen Puff pastry (defrosted)
- flour (for the work surface)
- 1 egg yolk
Preparation steps

Heat the oil in a pan and fry the meat on all sides on a high heat for around 2 min. Remove from the pan and set aside.

Fry the shallot and garlic, add the potatoes fry for a few minutes then add the tomatoes, meat, stock, a pinch of cumin, chilli powder and cinnamon and season with salt and ground black pepper. Simmer on a medium heat for around 10 min. Stir in the herbs and divide the mixture between 4 oven-proof dishes.

Heat the oven to 200C (180°C in a fan oven), 400°F, gas 6.

Roll out the pastry on a floured work surface and cut out four circles the size of the dishes. Place the circles on top of the filling in the dishes pressing the edges down firmly. Brush with egg yolk and if desired cut decorations out of the remaining pastry. Place these on top of the pies and brush with egg yolk too.

Bake for around 30 min. Remove from the oven and serve immediately.
