- 5 Tbsps butter (melted)
- 3 Tbsps clear honey
- 2 packets lemon sugar-free jelly candy
- 1 cup full-fat cream cheese
- 1 cup double cream (48% fat)
- ½ cup Blueberries
Preparation steps

Base line a 20cm springform cake tin with baking parchment. Crush the biscuits to fine crumbs in a food processor and tip into a bowl. Stir in the melted butter and 1 tbsp of the honey. Press the mixture into the base of the tin and spread level using the back of a spoon. Chill in the fridge.

Make the jellies according to packet instructions using two packs but only one quantity of water so the mixture is double strength. Stir in the remaining honey. Allow to become cold but not set.

In a bowl, gently mix together the cream cheese, cream and half the jelly. Stir in the blueberries. Pour the mixture into the biscuit lined tin and chill for about half an hour.

If the remaining jelly has set, warm in a pan until liquid and then cool. When almost cold pour on top of the cheesecake and chill for 2 hours.
