Berry Tartlets
Ingredients
- For the dough
- 1 Tbsp sugar
- 150 grams Pastry flour
- 80 grams butter
- 5 Tbsps Marsala wine
- 1 pinch salt
- butter (for the pans)
- For the filling and topping
- 1 pkg frozen Berry cocktail
- 2 Tbsps sugar
- 6 egg yolks
- 5 Tbsps sugar
- 100 milliliters Marsala wine
- slivered almonds
Preparation steps
Thaw the frozen berries and mix with 2 tablespoons of sugar.
Mix the flour and butter until crumbly. Add the salt and marsala. Knead into a smooth dough. Form the dough into a ball and wrap in plastic wrap. Chill for 1 hour. Preheat the oven to 180°C (approximately 350°F). Grease the tart tins with butter and sprinkle with flour. Roll out the dough between plastic wrap. Cut out 8 rounds and fit into tart tins, trimming flush with rim. Bake for about 20 minutes until golden brown. Remove from the oven and let cool.
Beat the egg yolks and 5 tablespoons of sugar until fluffy in a metal bowl. Add the marsala and beat over a hot water bath until creamy. Let cool and pour into the tart tins. Place 1 tablespoon of berries on each tart. Dust with powdered sugar and top with almonds. Serve immediately.
