- 8 Mini Burger buns (halved)
- 8 Scallop (roe removed)
- 1 Leek (green parts finely sliced)
- ⅛ cup sunflower oil
- 2 ½ Tbsps butter
- 2 Tbsps Corn starch
- 1 Tbsp paprika
- ½ tsp caster sugar
- salt
- peppers
Preparation steps
1.
Melt the butter in a large sauté pan set over a medium heat. Add the leek and sweat with a little seasoning for 6-8 minutes until softened.

Meanwhile, mix together the cornflour, sugar and paprika.
3.
Heat the oil in a large non-stick frying pan set over a moderate heat until hot.
4.
Dust the scallops on both sides with the cornflour mixture, shaking off any excess.
5.
Sear in the oil for 90 seconds before flipping and cooking the other side for a further minute.
6.
Place the scallops between the burger bun halves and serve with the sweated leeks.
