- For the cupcakes
- 1 cup soft butter (scant)
- ⅔ cup sugar
- 4 eggs
- 1 cup all-purpose flour
- 2 heaped Baking powder
- 1 pinch salt
- ¾ cup Almond flour
- 1 tsp vanilla extract
- For the icing
- 2 ½ cups powdered sugar
- warm water
- green Food coloring
- black Food coloring
- For the spiders
- 2 ¼ cups black Sugar paste
- ¼ cup white Sugar paste
Preparation steps
1.
For the cupcakes: preheat the oven to 190°C (170° fan) 375°F gas 5. Place paper cases in a 12 hole muffin tin.

Using an electric whisk, beat together the butter and sugar in a mixing bowl. Stir in the eggs one at a time.

Sift in the flour, baking powder and salt. Add the almonds and vanilla and stir well.

Spoon into the paper cases and bake for 20-25 minutes (insert a skewer or wooden cocktail stick into the centre of a cake - it will come out clean when the cakes are cooked). Cool in the tins for 5 minutes, then place on a wire rack to cool completely.

For the icing: sift the icing sugar into a bowl and beat in just enough warm water to make a stiff icing.

Put about 1/3 of the icing into a bowl and beat in the black colouring. Spoon into a piping bag.
7.
Beat the green colouring into the larger amount.
8.
Spread the green icing on the cakes.
9.
Pipe circles of black icing on the wet green icing and drag a cocktail stick through the lines to create a spiderweb effect. Leave to set.
10.
For the spiders: roll 1 large ball and 1 smaller ball for each spider. Dampen one side of one ball and stick together to form the head and body.
11.
Roll 8 strips of sugarpaste for the legs and attach with a dab of water. Curve the legs slightly. Roll 48 tiny balls for the eyes and flatten. Repeat for the remaining spiders.
12.
Roll small pieces of white sugarpaste for the eyes, flatten and attach to the spiders with a dab of water. Attach the black discs with a dab of water. Place the spiders on the cakes.
