6 sheets white gelatin

500 milliliters Buttermilk
4 Tbsps Pear syrup
75 grams sugar
100 milliliters Whipped cream (at least 30% fat content)
2 ripe Pear
1 mint

Preparation steps

Soften the gelatine in cold water. Rinse the lemon in hot water and wipe dry. Remove a few strips of zest from the peel, then finely grate the rest. Squeeze the juice from the lemon.

Mix the buttermilk with 3 tablespoons pear juice, the sugar, half the lemon zest strips, 1 tablespoon lemon juice, and the finely grated zest. Squeeze out the gelatin dripping, dissolve in a pan and add 2 tablespoons of buttermilk mixture. Stir this into the remaining buttermilk mixture. Whip the cream and fold into the buttermilk mixture. Portion into ramekins lined with plastic wrap and allow to set for at least 3 hours. Peel the pears, cut into quarters, and remove the core. Simmer with the remaining lemon and pear juices, covered, for one minute. Remove from the heat to cool. Dip the ramekins briefly in hot water to release the gelées from their molds. Garnish with the cooked pear, the remaining lemon zest, and mint. Decorate with thinly sliced dried pear slices, if desired.
