For the salad
1 Romaine lettuce
2 Chicken breasts
2 Tbsps vegetable oil
For the croutons
3 slices Toast
2 garlic cloves
4 Tbsps vegetable oil
For the dressing
1 crushed garlic clove
1 tsp lemon juice
½ tsp sharp Mustard
1 tsp Worcestershire sauce
2 egg yolks
100 milliliters olive oil
salt
peppers
1 pinch sugar
25 grams grated Parmesan
1 Anchovy fillet (at will)
Parmesan (to sprinkle)

Preparation steps

For the croutons, cut the bread into 1 cm cubes. Peel and finely chop the garlic. Heat the oil, add the bread cubes and fry over medium heat, until golden brown. Shortly before the end of cooking, add the garlic. Drain the croutons on paper towels.

For the salad, rinse the romaine lettuce and spin dry. Cut into 2 cm wide strips.

Rinse the chicken breasts, pat dry and chop into small pieces. Saute for 2-3 minutes in hot oil, until golden brown. Season with salt and pepper.

For the dressing, blend the crushed garlic, lemon juice, mustard, worcestershire sauce, egg yolks, olive oil, parmesan and anchovies (if desired). Season with salt, pepper and sugar. The dressing should be creamy and white. If necessary, add water or cream. Chill for 1-2 hours.

5.

Mix the romaine lettuce with the dressing and spread on plates. Sprinkle with the chicken and croutons. Serve sprinkled with parmesan.
