- For the salad
- 2 Tbsps olive oil
- 18 ozs mixed Seafood (e. g. calamari rings, squid, prawns, scallops, cooked mussels)
- 1 green Bell pepper (seeds removed, cut into thin strips)
- 2 scallions (finely sliced)
- 4 firm Tomatoes (diced)
- For the dressing
- 1 Tbsp balsamic vinegar
- 1 tsp honey
- 3 Tbsps extra virgin olive oil
Preparation steps

For the salad: heat the oil in a large frying pan. Add the mixed seafood and stir-fry for 4-5 minutes, or until the shellfish is just cooked. Add the cooked mussels and squid for the last 2-3 minutes. Put into a large bowl, set aside and allow to cool for 20 minutes.

For the dressing: whisk together all the ingredients.

Toss together the cooled seafood, vegetables and the dressing.

Put into serving bowls.
