Preparation steps

Divide the cauliflower into florets, wash and blanch in salted water for about 2-3 minutes, until very al dente. Drain and put into a baking dish. Add a dash of white wine.

Heat the butter and flour in a pan until the mixture foams, then stir in the milk and simmer until creamy. Then stir in the grated cheese and thyme and season to taste with salt, pepper and nutmeg. Pour over the cauliflower florets and scatter with the finely diced bread. Bake in a preheated oven (180°C) for about 20 minutes.
