- For the dough
- 300 grams Pastry flour
- 2 tsps Baking powder
- 100 grams sugar
- 1 pkg Vanilla sugar
- 100 grams butter
- 2 eggs
- For the filling
- 3 cans Clementine
- 1 kilogram Quark
- 175 grams sugar
- 2 packets Vanilla sugar
- 6 egg yolks
- 3 packets Pudding mix
- 200 milliliters Whipped cream
- 1 lemon (zest and juice)
- 400 milliliters milk
- For the meringue
- 200 grams sugar
- 6 egg whites
Preparation steps

For the dough, mix all ingredients and knead into a smooth dough. Form into a ball and wrap in plastic wrap. Chill for 1 hour. Drain mandarin oranges. Mix all ingredients for the filling together. Beat mandarins with an electric mixer. Grease a deep baking tray and spread on dough. Prick several times with a fork.

Drain oranges and place on top of dough. Pour filling over and smooth. Bake in a preheated oven at 180°C (approximately 350°F) for 40-50 minutes. For the meringue, beat egg whites until stiff. Sprinkle with sugar and continue beating until stiff.

Place meringue in a piping bag with a serrated tip. Remove cake from oven and pipe meringue on top. Bake for another 10-15 minutes. Leave cake in oven to cool overnight. Slice and serve.
