- For the pastry case
- 1 ¾ cups all-purpose flour
- 1 cup cold butter (scant)
- ¼ cup Sour cream
- 1 egg
- olive oil (for the dish)

- For the filling
- ½ cup grated Parmesan
- 2 Tbsps olive oil
- 14 ozs cherry Tomatoes (halved or quartered)
- 2 cloves garlic cloves (finely chopped)
- 1 onion (finely chopped)
- 1 Tbsp chopped rosemary
- ⅔ cup dry white wine
- 2 Tbsps freshly chopped Basil
- Basil (for garnish)
Preparation steps

For the pastry, knead together the flour, butter, sour cream, egg and a little salt to form a smooth dough. Wrap in cling film and chill for around 30 minutes.

Heat the oven to 200°C (180°C in a fan oven), 400°F, gas 6 and brush the dish with oil.

Roll out the pastry on a floured surface to slightly larger than the dish and line the dish with it. Sprinkle the parmesan over the base.

For the filling, heat the oil in a pan and add the tomatoes, garlic, onion and rosemary. Fry for 3-4 minutes then deglaze with the white wine and simmer over a medium heat for around 5 minutes.

Remove from the heat, stir in the basil and leave to cool slightly, then spread over the pastry base and bake in the oven for around 35 minutes. Serve garnished with fresh basil.
