- 1 pkg Sausage (garlic-flavored chicken sausage works well)
- 2 red Bell pepper (rinsed; trimmed and cut into chunks)
- 1 yellow Bell pepper (rinsed; trimmed and cut into chunks)
- 1 large Red onion (peeled and cut into chunks)
- 1 medium Zucchini (rinsed; trimmed and cut into rounds)
- 3 Tbsps good-quality olive oil (divided)
- salt (to taste)
- freshly ground Black pepper (to taste)
- 1 bunch scallions (cleaned and trimmed; to garnish)
- 8 wooden Skewer (presoaked in water for 20 minutes)
Preparation steps

Preheat grill to medium high heat.

Rinse the sausage under cold running water and pat dry with paper towels. Cut the sausage into 1 1/2-inch pieces. In a large bowl, toss sausage, peppers, red onion, and zucchini with 2 tablespoons olive oil, season to taste with salt and pepper.

Thread the sausage and vegetables onto the prepared skewers, alternating between the two. Grill, turning frequently, until the sausage is browned and cooked through and the vegetables are tender crisp, about 12 to 14 minutes. Brush the skewers with the remaining oil olive from time to time.

Gently grill the scallions for the last 2 to 3 minutes.

Divide the skewers among plates, garnish with scallions and serve.
