1 small chicken
6 Tbsps olive oil
1 onion (finely diced)
1 clove garlic cloves (finely diced)
2 red Bell pepper
2 Tomatoes
salt
freshly ground peppers
1 ⅛ cups Paella rice
1 ⅔ cups Chicken broth
1 bay leaf
1 sachet Saffron
1 ⅔ cups shrimp (peeled and ready to cook)
5 cups Shellfish (e. g. mussels, clams)
1 cup frozen peas

Preparation steps

1.
Wash, dry and dice the chicken.
2.
Drop the tomatoes into boiling water for a few seconds, then skin, quarter, deseed and chop.
3.
Wash and core the bell peppers and cut into strips.
4.
Wash the shrimp and shellfish, scrub the shellfish.
5.
Heat the oil in a large skillet or paella pan and slowly saute the meat on all sides until golden brown. Add the onion and fry briefly. Add the chopped garlic, bell peppers, tomatoes and peas and fry briefly. Season with salt and pepper.
6.
Scatter the rice into the skillet and stir in carefully. Add the broth, bay leaf and the saffron dissolved in a little water. You should not stir the paella again.
7.
Turn down the heat and simmer without a lid for 25-30 minutes.
8.
About 10 minutes before the end of cooking time add the seafood and cook with the rice. At the end of cooking time remove from the heat, check the seasoning and serve. The liquid should have been completely absorbed.
