- 400 grams Chicken breasts
- 2 onions
- 100 grams Toast
- 150 milliliters Whipped cream
- ¼ bunch Chervil
- ¼ bunch parsley
- salt

- For the potato salad
- 750 grams Sweet potato
- 1 Cucumber
- 200 grams Snow peas
- 2 scallions
- 1 bunch Chervil
- 1 bunch parsley
- 150 milliliters Chicken broth
- 1 Tbsp Mustard
- 4 Tbsps Vinegar
- 4 Tbsps vegetable oil
- 1 tsp sugar
Preparation steps

Rinse the potatoes and cook for 20 minutes. Peel cucumber, cut in half and scrape out the seeds with a spoon. Cut into slices. Rinse snow peas, pinch back ends and blanch in boiling salted water 5 minutes. Rinse scallions, clean and cut into rings. Rinse herbs and chop finely. Peel potatoes and cut into slices, mix with the other ingredients. Mix broth, vinegar, oil, mustard and spices and add to potatoes.

Peel the onions. Soak toast cubes in cream. Rinse herbs, chop finely. Rinse chicken, pat dry and finely dice. Finely chop onion, herbs, toast, meat and spices with a food processor. Form the mixture into 12 meatballs and fry on both sides about 8 minutes in the hot ghee. Serve with potato salad.
