- 3 Chicken breasts about 130 g (approximately 4.5 ounces) each
- salt

- 3 Tbsps Canola oil
- 3 handfuls salad
- 300 grams Tomatoes
- ¼ honeydew melon
- 2 tsps Mustard
- 4 Tbsps Orange juice
- 1 tsp sugar
- 2 Tbsps white balsamic vinegar
- 4 Tbsps olive oil
- 4 Tbsps sunflower oil
- 2 pinches cayenne pepper
- ½ tsp Coriander
- fresh cilantro (for garnish)
Preparation steps

Rinse the chicken breasts, pat dry and season with salt and pepper. Heat the canola oil in a large pan and cook the chicken breasts over medium heat for about 6-8 minutes on each side. Remove from the pan and allow to cool slightly.

Rinse the salad mix and spin dry. Rinse the tomatoes, cut in half, remove the seeds and dice. Peel the honeydew and cut into small cubes. Whisk together the mustard, orange juice, sugar, white balsamic vinegar, olive oil and sunflower oil. Season with cayenne pepper and coriander.

Line a large serving bowl with the salad mix. Slice the chicken breasts diagonally and place onto the salad mix. Top with the diced honeydew and tomatoes. Drizzle the salad with the dressing and garnish with fresh cilantro.
