The carrots are full of fibre, one of which is pectin, which satiates us for a long time and is good for digestion. The plant pigment beta-carotene makes the carrots beautifully orange and gives us a fresh complexion.
The chicken and vegetable soup is fresh, tasty and light. If you would like to make the soup a bit richer, you can add diced potatoes or bread.

- 2 Chicken breasts
- 400 milliliters Chicken broth
- 2 Tbsps Watercress
- 1 rosemary
- ½ Zucchini
- 1 carrot
- ½ tsp ginger
- 100 grams Baby corn cob
- soy sauce
- freshly ground peppers
Preparation steps

Rinse the zucchini and cut into long strips. Peel the carrot and also cut into long strips.

Bring the chicken broth and carrots to a boil, cover and cook for about 2 minutes. Add the zucchini, ginger, rosemary, baby corn and chicken breasts, cover and continue to cook for about 15 minutes over low heat. Finally, add the watercress, season with soy sauce and pepper and serve.
