- 500 grams Chicken breasts
- 60 grams fresh Galangal (substitute ginger)
- 2 garlic cloves
- 4 Tbsps vegetable oil
- ¼ tsp Sambal oelek
- 5 Tbsps light soy sauce

- 250 grams Long grain rice
- 300 grams Snow peas
- 150 milliliters Chicken broth
- ½ tsp cornstarch
Preparation steps

Rinse chicken fillets, pat dry and slice. Peel galangal and garlic and very finely chop. Mix with oil, sambal oelek, soy sauce and pepper. Marinate chicken in mixture for about 2 hours in refrigerator.

Boil rice in salted water for about 20 minutes. Rinse snow peas and cut in half crosswise.

Mix broth with cornstarch until smooth. Heat a wok or deep frying pan, remove chicken from marinade, drain and sear. Add snow peas and cook briefly before adding broth. Add marinade and simmer over medium heat for about 5 minutes.

If needed, thicken more by adding cornstarch mixed with cold water. Season with salt and pepper. Serve with rice.
