For the brochettes
4 skinless Chicken breasts (diced)
1 Red onion (cut into wedges with wedges separated into pieces)
¼ cup olive oil
1 Tbsp honey
1 Tbsp Sesame seeds
1 tsp paprika
½ tsp Cumin powder
salt
Black pepper
wooden Skewer (soaked in cold water for 30 minutes beforehand)
For the cold ratatouille
¼ cup olive oil
1 Zucchini (de-seeded and grated)
2 carrots (peeled and finely diced)
2 yellow Bell pepper (de-seeded and finely diced)
½ Red onion (finely diced)
1 Tbsp parsley (finely chopped)

Preparation steps

1.
Prepare the ratatouille by heating the olive oil in a large casserole dish over a medium heat until hot.

Add the red onion, yellow pepper, carrot and courgette and sweat for 10-12 minutes until they start to soften. Add a little seasoning and remove from the heat. Spoon into a bowl and allow the vegetables to cool to one side.

Once cool, spoon into a container, cover and chill.

Whisk together the olive oil, honey, ground cumin, paprika and seasoning until smooth. Add the chicken breast and leave to marinate for 10 minutes.

Preheat the grill to hot. Remove from the marinade and roll in the sesame seeds. Thread the chicken pieces onto the skewers, alternating with pieces of red onion.
6.
Grill the brochettes for 8-10 minutes, turning frequently until the chicken is cooked through.
7.
Remove the cold ratatouille from the fridge and stir through the chopped parsley. Serve in split dishes with the brochettes on one side and the ratatouille on the other.
