Ingredients

For the soup
1 clove garlic cloves (minced)
2 onions (chopped)
2 Tbsps olive oil
1 cup plain low-fat Yogurt
cup Buttermilk
1 Tbsp lemon juice
cup crushed Ice
2 Cucumber (peeled and de-seeded and diced)
¼ cup Walnut (chopped)
In addition
1 Tbsp mint (finely chopped)
½ Cucumber (cut into batons to garnish)

Preparation steps

1.
For the soup: Place all the ingredients in a food processor and pulse until you have a smooth soup.
2.
Transfer to a bowl and season to taste. Stir in the chopped mint and transfer to a glass serving bottle.
3.
Chill for at least 2 hours, or until ready to serve.
4.
Serve in glasses with 2 cucumber batons inside each glasses as a garnish.
