2 Tbsps sunflower oil
2 large, skinless Chicken breasts (diced)
1 cup long-grain white rice (rinsed thoroughly)
5 cups chicken stock
2 lemons
flat-leaf parsley (chopped)
salt
freshly ground Black pepper

Preparation steps

Heat the oil in a saucepan set over a medium heat until hot.

Add the chicken and a little seasoning. Cook for 3-4 minutes until starting to colour.

Stir in the rice, cover with the stock, and cook until simmering. Add the juice of one lemon and stir well.

Pour into a slow cooker, cover with a lid, and cook on low for 5 hours until the rice has absorbed some of the stock and the chicken is cooked through.
5.
Season the soup with salt and pepper, and then ladle into bowls, sprinkling over some parsley.
6.
Cut the remaining lemon into thin slices and use as a garnish.
