- 4 egg whites
- 2 cups powdered sugar
- ⅕ cup Corn starch
- 1 ½ cups Almond flour
- 2 Tbsps ground Coffee
- ¾ cup grated semi-sweet chocolate (60% cocoa solids)
- For the filling and decoration
- 0.333 cup chopped Chocolate (60 % cocoa solids)
- ¼ cup butter
- 1 egg yolk
- ¾ cup powdered sugar
- 2 Tbsps instant Coffee
Preparation steps
1.
Heat the oven to 160°C (140° fan) 325°F gas 3. Line a large baking tray with non-stick baking paper.

Whisk the egg whites until stiff, then whisk in the icing sugar and cornflour until the mixture is stiff and shiny.

Fold in the almonds, coffee and chocolate until combined.

Spoon small rounds onto the baking tray, about 2 cm|1" diameter. Bake for 15 minutes until firm. Cool on the baking trays for a few minutes, then place on a wire rack to cool completely.

For the filling: melt the chopped chocolate in a heatproof bowl over a pan of simmering (not boiling) water.
6.
Beat the butter until creamy, then beat in the egg yolk, icing sugar and coffee. Stir in the chocolate until smooth.
7.
Sandwich the macaroons with chocolate filling and drizzle (or pipe) the remaining chocolate cream over the top of the macaroons.
