Preparation steps

Line the base and sides of a 20 cm x 10 cm x 6 cm (8” x 4” x 2 ½”) baking tin with greaseproof paper.

Combine the sugar, cream, butter and liquid glucose in a large saucepan, stirring well. Cook over a medium heat, stirring frequently, until the sugar dissolves.

Increase the heat slightly until the syrup starts to boil. Once the syrup reaches 116°C / 240F on a sugar thermometer, remove the syrup from the heat.

Leave it to stand for 5 minutes or until the temperature drops to 110°C / 230F and then stir in the vanilla extract and a pinch of salt. Beat the fudge thoroughly with a wooden spoon as it cools and drops to 60°C / 140F.

Continue to beat firmly for 2 minutes before pouring half into the prepared tin. Working quickly, sprinkle over the chocolate before pouring the rest of the fudge on top.

Leave the fudge to cool and set until firm at room temperature. Turn out the fudge and cut into squares before serving.
