Chocolate Coffee Cheesecake
Ingredients
- For the crust
- 200 grams Pastry flour
- 2 Tbsps cocoa powder
- 75 grams sugar
- 1 pinch salt
- 1 egg
- 150 grams butter
- 50 grams Walnut
- butter (for greasing)
- For the filling
- 750 grams Quark (well drained)
- 250 grams Mascarpone
- 4 eggs
- 150 grams sugar
- 2 centiliters Coffee liqueur
- 1 Tbsp Instant coffee
- 1 packet Chocolate pudding powder
- For the garnish
- 150 grams Dark couverture chocolate
- 2 Tbsps Whipped cream
- Whipped cream
- Coffee bean (or chocolate coffee beans)
Preparation steps
For the crust: Combine flour, cocoa, sugar and salt on a work surface. Create a well in the center and add beaten egg and butter. combine with a dough cutter, then knead by hand to create a dough. Incorporate walnuts. Form a ball, wrap in plastic wrap and chill for about 30 minutes.
Preheat the oven to 180°C (approximately 350°F). Grease springform pan with butter.
Roll out dough and press into the pan. Beat quark and mascarpone until smooth. Beat eggs and sugar until creamy. Heat liquor and dissolve coffee powder. Stir eggs, liquor and pudding powder into quark mixture. Pour into crust and bake for about 1 hour.
Remove from oven, allow to cool in the mold, then release from pan.
Chop chocolate and melt over a double boiler. Stir in cream. Slice cheesecake and garnish each piece with chocolate, whipped cream and coffee beans and serve.
