Looking for that old-fashioned look - add 3 drops of organic green food coloring to the mint mixture. Can't locate castor sugar? Put regular sugar in a food processor and process for 30 seconds to make your own.

- For the base
- ¼ cup unsalted butter
- ¼ cup caster sugar (superfine sugar)
- ¾ cup all-purpose flour
- ¼ cup cocoa powder
- For the filling
- 1 ¾ cups powdered sugar
- 1 Tbsp warm water
- ½ tsp peppermint extract
- For the topping
- 6 ozs Dark chocolate (70% cocoa)
Preparation steps
1.
For the base: heat the oven to 180°C / 350°F. Grease a 12" x 8" baking tin and line the base with non-stick baking paper.
2.
Beat together the butter and sugar in a mixing bowl until light. Sift in the flour and cocoa until the mixture binds together.
3.
Knead lightly, then press into the base of the tin. Prick all over with a fork and bake for 10-15 minutes until firm to the touch. Cool in the tin.
4.
Sift the icing sugar into a bowl and gradually stir in the water and peppermint extract until thick and smooth.
5.
Spread over the base and leave to set.
6.
Melt the chocolate in a heatproof bowl over a pan of simmering (not boiling) water. Allow to cool slightly.
7.
Spread over the filling and leave to set completely. Once set, cut into squares.
