- 1 head Romaine lettuce (shredded)
- 1 head Frisée (shredded)
- ½ bunch Watercress (torn)
- 6 slices cooked Bacon (diced)
- 2 ripe Avocados (pitted, peeled and chopped)
- 12 ozs cooked Chicken breasts (diced)
- 2 Tomatoes (chopped)
- 2 hard-boiled eggs (separated, the yolk finely chopped and the white finely chopped)
- ½ cup grated Cheese
- 2 Tbsps chopped Chives
- For the dressing
- ¼ cup Red wine vinegar
- 1 Tbsp Dijon mustard
- 1 tsp sugar
- salt
- peppers
- ½ cup extra virgin olive oil
Preparation steps

Mix together the salad leaves and place in a salad bowl.

Arrange the bacon, avocado, chicken, tomatoes, egg yolks, and whites and cheese over the leaves, as in the photo. Sprinkle with the chives.
3.
For the dressing: whisk together the ingredients and serve with the salad.
