If you can't find glass noodles at your local grocery store, head to your nearest Asian specialty food store.

1 ¾ ozs Glass noodles
1 cup soybean sprout
1 tsp Oil
1 Tbsp Rice wine vinegar
2 Tbsps Orange juice
2 Tbsps lemon juice
1 tsp light soy sauce
½ inch fresh ginger (peeled and pressed or minced)
¾ cup Cucumber (cut into strips)
0.333 cup fresh crushed red pepper flakes
2 Tbsps chopped cilantro

Preparation steps

Cook the glass noodles according to the instructions on the packet, drain through a sieve, rinse in cold water and drain thoroughly.

Put the sprouts into a sieve and pour boiling water over them, then rinse in cold water and drain.

Mix together in a small bowl, the oil, rice vinegar, orange juice, lemon juice, soy sauce, and ginger root. Mix the glass noodles with the cucumber, pepper and sprouts.

Toss with the vinaigrette, garnished with cilantro leaves.
